What are your favorite "easy" dinners?

I need some recipes. What do you make for dinner that is easy and that your kids will actually eat?

Hot Italian Beef Sandwiches

1 lb. sliced deli roast beef

1 can french onion soup

provolone cheese

rolls

Stir roast beef into soup. Microwave until heated through. Place on rolls (toast first if you wish), top with cheese and serve. Use leftover soup as dipping sauce. Very quick and very yummy!

Here is an easy Chicken Pot Pie recipe that my 4yr old, my teenagers and husband love. Use the Pillsbury or store brand pie crust that is already rolled out, or the frozen pie shells if you like. Put one in the pie plate and use the other one to top the pie. Mix together cooked chicken breast or thighs, store bought roasted chicken or even canned chicken about 2-3 cups. Stir in a can of cream of celery soup, a can of cream of potato soup and a can of veg-all (or the frozen veg-all) about 1/2 can of milk. Add a little black pepper and 1 tsp of thyme. Mix it all up, pour into the pie shell top with the other shell, crimp the edges cut 4 or 5 slits in the top to vent and bake in a 375-400 degree oven until browned depending on your oven. Usually 45 mins will do it. Great warmed up the next day. Enjoy

I have a super easy crock-pot recipe! Beef tips and rice--- 1 lb of beef stew meat (for about 4 people)

2 cans of Campbell's Golden Mushroom soup -- Cook in crock pot for about 6 hours and serve over cooked rice or noodles. Very easy and my husband loves it!

I have a 7-year-old girl that I homeschool, and I'm also 9-weeks pregnant, so we're both picky right now. But my chicken soup recipe is easy and tasty, and it's good for the chilly weather.

1 whole chicken - throw away the giblets and wash the chicken inside and out

1 large carrot - peeled and cut into 3-4 chunks

1 large onion - peeled and halved

2 garlic cloves, peeled and crushed with the side of a knife

1 or 2 celery ribs (depending on how much you like celery, but it takes away the chicken smell) - cut into 3-4 pieces

3 chicken bouillon cubes and 2 bay leaves

In a large pot, place everything, except the chicken, on the bottom of pot. Put the whole chicken on top of veggies. Pour water to cover the chicken. Boil uncovered. Lower the heat, cover the pot, and let simmer for 2 hours until breast meat falls off easily. Turn off the heat, and transfer the contents of pot, except the broth, to a large shallow bowl, like a pasta platter. Discard the bay leaves, but you can keep the softened garlic, if you'd like. Dice the veggies into bite size pieces and shred the chicken meat with your hands. Return the edible contents to the pot. Serve with rice or pasta. (If you don't like too much fat, you can skim it off when the soup cools a bit, or prepare it the day before, and then it'll be easier to skim the fat.) Oh, and salt/pepper to taste.

My daughter usually asks for seconds, and she even eats up the carrots!

Bean enchilladas! Super quick and my kids love it. I take whole wheat tortillas, vegetarian refrieds, shredded cheddar, and a small can of enchillada sauce. Just spread the beans in the tortillas, roll them up and put them in a baking dish, dump the sauce and cheese on top and bake. Then I serve it with rice and corn, or another quick steamable veggie. My kids are super picky but they love it. Hope you like it!

I have an almost two-year--old and a ten-week-old, so you know I need easy dinners. I am talking super-quick! One idea that is healthy and easy--rotisserie chicken from the store. If you have a Whole Foods nearby, buy the salt and pepper one. Last night, we bought that, and added it to whole wheat pasta to which I added some jarred basil pesto (we bought the WF brand--only $3.99!) Of course, you can add cheese, tomatoes, whatever (but we didn't...I was tired. You can also use the cooked chicken for soft tacos, salad, etc.!

I have a 4 year old boy and an almost 3 year old girl. They are very differant in what they like to eat and it seems to always change. What they liked one week they hate the next. So a couple meals I can always count on are -

Baked chicken and Rice

Rice - enough for the number of people you are serving.

1 whole chicken

1 bottle of italian dressing

1 whole sweet vadalia onion chopped into chunks

Carrots - as many as you like. We like carrots in our house so I cut up a ton into chunks. You can also buy the mini carrots and toss them in. Very easy if you are short on time.

4 medium potatos peeled or not and cut into chunks. Again what ever you have time for. The skin will come off easily after it has been baked if you don't like the skins, just remember to scrub them clean to get the soil off.

Preheat your oven to 350. Put all the ingredients in a pan. Pour as much of the Italian dressing on the meat and vegi's to cover. I usually use half a bottle depending on the size of the chicken and amount of vegi's. Than I salt and pepper a little. You can always add more after it has baked, but you can't take it off once it is on. I have learned that by mistake and eaten many a salty meal.

Bake for 1 hour covered more or less depending on the size of the chicken.

Lemon Chicken is another winner.

1/4 cup lemon juice

3/4 cups sugar

3/4 cups water or chicken broth your choice

1 tablespoon cornstarch

2 tablespoons cold water

Chicken Nuggets - 3-5 per person once heated cut into bite size peices

Rice - cook the amount you need for the number of peole you are serving

Vegi's of your choice - Broccoli, Carrots, bamboo shoots - what ever your kids like

Lemon Sauce - in a small sauce pan bring lemon juice, 3/4c water and sugar to a boil. You can substitue water with chicken broth if you like. In a small bowl mix corn starch and cold water. Stir this into your boiling lemon mixture and keep boiling for one minute to thicken mixture. Pour into a container you can put in your freezer while you prepare everything else. Cooling this mixture will also help it to thicken

Prepare the amount of rice you will need based on the number of people you are serving by following the directions on the rice package.

Prepare the vegi's of your choice. I like using a bag of frozen mixed vegi's of broccoli and carrots.

Prepare the chicken nuggets either in the oven, toaster oven or microwave by following the directions on the bag once heated cut into bite size peices

Once everything is ready I take a spoonful of rice in the center of the plate, put the chicken pieces and vegis on top of the mound of rice and top with lemon sauce.

build your own soft tacos.

i put out flour tortillas, a can of refried beans, some cheese, some lettuce, some tomatoes or salsa, some avocados, some corn, and whatever else in lurking in the fridge. normally i have some kind of taco meat in the freezer to thaw, but it works without it.

my 4 yr old can build his own with no help. the 3 yr old needs some help in spreading and rolling.

Shepherds Pie

1 lb ground beef cooking with onions, garlic & a little salt & pepper

1 can drained peas

1 can drained corn

mash potatoes

mild cheddar shredded

combined beef, peas & corn, put in baking dish

top with mashed potatoes & cheese

put in a preheated oven set on 375

bake for 25 mins until cheese is melted

my family LOVES this. it's easy and a favorite in my house.

Pizza Bar and Paninis!

Pizza-

Take a few mini indv. pizza crusts and let the kids choose the toppings. Then bake!

Paninis-

Pesto, turkey, cheese, tomato... and then put it in a panini press!

I have four children, all with different tastes. Sometimes it get quite challanging to come up with something that everyone will eat. I went on Kraftfoods.com and signed up for their free cookbooks. I have had such success out of that. One of our favorites is Mac and Cheese Lasagna.

1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner, prepared as directed on package using Light Preparation directions 1-1/2 cups spaghetti sauce 1/2 lb. lean ground beef, cooked, drained 1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese 2 Tbsp. KRAFT Grated Parmesan Cheese

PREHEAT oven to 350°F. Spoon half of the prepared Dinner into lightly greased 8-inch square baking dish.

TOP with half each of the spaghetti sauce, meat and shredded cheese. Repeat layers. Sprinkle with Parmesan cheese.

This is a crowd pleaser, but seriously check out that website, you will love it!!
